Miso Udon originated in 1925, when its founder, Shimamoto Mankichi, opened "Yamamoto Miso" in Osu, Nagoya. For over a century, it has been deeply loved by Nagoya residents and has become a symbol of "Nagoya Cuisine". Yamamotoya adheres to hand-making noodles, carefully selects ingredients, and preserves the original flavor. Please enjoy our signature "miso", which is simmered slowly in earthen pots with Haccho miso as the base, paired with chewy noodles.
