1Since its founding in 1925 (Taisho 14), Yamamotoya, a long-established restaurant that has preserved the traditional Nagoya dish Miso Nikomi Udon, will open its third overseas store in Seoul, South Korea on September 24, 2025.
Headquartered in Nagoya, Aichi Prefecture, and led by Yusuke and Kosuke Aoki, the fifth-generation owners, this new opening marks a significant step in expanding Nagoya’s culinary culture to the world.

Following the successful expansion into Hong Kong in 2019, where both of its stores continue to draw long lines of eager customers every day, this Seoul opening represents Yamamotoya’s next challenge in sharing the taste of Nagoya with an even broader international audience.

Yamamotoya’s history began when its founder, Mankichi Shimamoto, opened Yamamoto Nikomi in the Osu district of Nagoya during the Taisho era.
Its name can even be found on maps from that period, showing how deeply rooted the brand is in the city’s history.
For over a century, Yamamotoya has been cherished by the people of Nagoya and is now recognized as a symbol of Nagoya-meshi—the unique local cuisine of Nagoya.

The Seoul store embodies the spirit of innovation and tradition carried on by the fifth-generation Aoki brothers, as they continue to create new value while honoring the restaurant’s heritage.

At Yamamotoya, we remain devoted to our craft—handmade noodles prepared daily by skilled artisans and our original Aji Miso broth made with Hatcho miso.
Our noodles are kneaded using only wheat flour and water, without salt, then rolled, stretched, and cut by hand right before serving to achieve their signature firm and chewy texture.
Please enjoy our authentic Miso Nikomi Udon—served bubbling hot in a traditional earthen pot, featuring our rich, flavorful Aji Miso and perfectly firm noodles—now available in Seoul.
